- The selected grapes are dried in ventilated rooms for about three months, then pressed and fermented in temperature-controlled stainless steel tanks for around 30 days. After a period in concrete tanks for malolactic fermentation, the wine passes to oak casks of medium and large size for a minimum of three years, then refines at least six months in bottle.
